Spicy Hijiki Pepperoncino with Edamame Recipe (Vegetarian)

Cooking Time: 10-15 minutes

Servings: 2 servings

Ingredients:

  • 2 Tablespoons dried naga hijiki, soaked 10 minutes

  • 3 Tablespoons shelled frozen edamame soybeans

  • 2 cloves of garlic, minced

  • 2 Tablespoons extra virgin olive oil

  • 1 small dried chili pepper, thinly sliced

  • 1 Teaspoon soy sauce

  • 1/2 Tablespoon of unsalted butter

  • A pinch of Sea salt or smoked salt

  • 200g pasta

  • Optional: A dash of Parmesan cheese and/or dried Aosa flakes as a topping

Instructions

1.

Soak hijiki until soft; drain.

2.

Sauté hijiki in olive oil together with the garlic, edamame and chili peppers for 1–2 minutes.

3.

Toss hijiki and edamame with some soy sauce and butter for 1-2 minutes. Cook pasta and blend in.

4.

Finish with a pinch of salt to taste and a dash of Parmesan cheese and/or dried Aosa flakes to your liking.

Enjoy!
