There’s a particular kind of freshness that only quick pickles can deliver—clean, vibrant, and ready within the hour. In Japan, asazuke captures this perfectly: lightly seasoned vegetables, briefly rested, still full of life.


In this version, cabbage, cucumber, carrot, and daikon radish are combined with shio koji and gagome kombu—bringing together crunch, juiciness, and a gentle layer of ocean umami. The addition of cucumber shifts the profile toward something even more refreshing: cool, hydrating, and instantly approachable.


The result is bright and balanced—crisp leaves, snappy slices, and a subtle, silky coating that carries flavour without heaviness.

Shio Koji – Mild Fermentation, Rounded Flavour

Ingredients

  • 120 g cabbage (roughly chopped)

  • ½ cucumber (~100 g), thinly sliced

  • 40–50 g carrot, julienned

  • 80 g daikon radish, thinly sliced or cut into matchsticks

  • 1–1½ tbsp shio koji

  • 2–3 g gagome kombu (finely shredded)

  • ¼ tsp sea salt

Optional for brightness

  • 1 tsp rice vinegar or a pinch of lemon zest


Method

  1. Prepare the vegetables

    Combine cabbage, cucumber, carrot, and daikon in a bowl. Sprinkle with salt and gently massage for about 1 minute. The cucumber will release some water—this is part of the light pickling process.

  2. Add seasoning

    Mix in shio koji and gagome kombu, coating everything evenly.

  3. Press lightly

    Transfer to a container or bag and press out excess air. Light pressure helps the vegetables absorb flavour evenly.

  4. Quick pickle

    Rest for 30–45 minutes for a very fresh, crisp finish, or up to 2 hours in the refrigerator for a more integrated flavour.

  5. Finish and serve

    Add a touch of rice vinegar or citrus zest just before serving for a brighter, lifted profile.
