Cold brew Ma-kombu dashi is a rich yet refined expression of Japanese umami—round, gently sweet, and deeply satisfying without heaviness. Known as “the king of kombu,” Ma-kombu is prized for its full-bodied character: softer and slightly sweeter than Rishiri kombu, with a smoother, less herbal and less salty profile. The result is a broth that feels generous and balanced—comforting, but still clean.

Why Ma-Kombu?

Ma-kombu is often considered the most versatile and balanced kombu:

Method: Cold Brew (Mizudashi)

  • Gently wipe the kombu with a dry cloth

    (Do not wash—those natural white crystals are rich in umami compounds.)

  • Use 20g Ma-kombu per 1 liter of water

  • Place in cold water and refrigerate for 8–12 hours (overnight)

  • Remove kombu and store:

    • In the refrigerator for up to 3 days, or

    • In a resealable bag in the freezer for up to 1 month

  • Round, mellow, slightly sweet umami

  • Soft, full-bodied mouthfeel with no sharp edges

  • Balanced mineral depth without bitterness

  • More presence than Rishiri—yet still clean and elegant

*Don't throw away the leftover kombu after making your dashi. You can cut and reuse the kombu itself to make Tsukudani, snacks, or add them to your rice dishes, soups, stews, stir fries, and salads and more.
