This smoky Aosa-infused baba ganoush brings together fire-roasted eggplant and premium Japanese dried seaweed for a deeply satisfying fusion of land and sea. The natural umami of Aosa adds a gentle ocean essence that enhances the creamy richness of tahini, creating a dip layered with flavor. Packed with fiber, antioxidants, and minerals, this plant-based dish supports balanced, regenerative eating while drawing inspiration from both Middle Eastern tradition and Japanese foods. Time: Prep: 15 minutes

Yield: ~2 cups


Ingredients:

  • 6 medium Japanese eggplants

  • 4 g dried aosa (about 2 tbsp), rehydrated(blossoms to be about 15g)

  • 4 tbsp tahini

  • 2 tbsp fresh lemon juice

  • 2 small garlic cloves, finely minced

  • 3 tbsp extra virgin olive oil (plus more for serving)

  • Sea salt, to taste

Optional finish:Toasted white sesame seeds, sumac, smoked paprika powder, cumin powder







Instructions:

1. Roast the Eggplant Preheat oven to 220°C.Slice eggplants in half lengthwise and place cut-side down on a lined tray. Roast for 30–40 minutes until completely soft and collapsed.

Let cool slightly, then scoop out the flesh with a spoon. Transfer to a strainer and let drain for 10 minutes to remove excess moisture.

2. Prepare the Aosa Soak dried aosa in cold water for 5 minutes. Drain and squeeze very well to remove excess water, then roughly chop.

3. Mix the Baba Ganoush (No Food Processor) In a bowl, mash the eggplant with a fork until mostly smooth but still slightly textured. Add tahini, lemon juice, garlic, salt, and 2 tablespoons olive oil. Mix well until creamy.

4. Add the Aosa Fold in the chopped aosa, mixing just enough to distribute it evenly. You want small green flecks throughout—not a fully blended paste.

5. Serve Spoon into a bowl and create swirls with the back of a spoon. Drizzle with remaining olive oil and finish with toasted sesame seeds, sumac, smoked paprika powder and cumin powder if desired.

Notes:

  • For extra smokiness, char the eggplants over an open flame before roasting or instead of using the oven.

  • The texture should be soft and creamy with a slight rustic bite—not completely smooth.

  • Aosa adds a subtle ocean depth that pairs naturally with the richness of tahini and eggplant.
