This quick, plant-based snack transforms leftover kombu from dashi into crispy, umami-rich bites that capture the true sea essence of premium Japanese foods. Ingredients

  • Kombu from mizudashi (made with ~20 g dried ma-kombu, cold-brewed 6–12 hrs)

  • 1 tsp olive oil

  • 2 tbsp cashew powder (or finely ground dry cashews)

  • 1 tbsp nutritional yeast

  • 1/4 tsp garlic powder

  • 1/4 tsp onion powder

  • 1 tsp lemon juice (lightly tossed or spritzed)

  • Salt, to taste


Method

  1. Prepare kombu (after dashi)

    Remove kombu from your mizudashi. Slice into thin, bite-sized strips (this helps even crisping).

  2. Dry thoroughly (critical step)

    Pat completely dry with a towel. For best results, air-dry 20–30 minutes or lightly pre-dry in a low oven (80–90°C for 10–15 min).

  3. Light coating

    Toss kombu strips with olive oil and lemon juice until just lightly coated.

  4. Make “cheese” mix

    Combine cashew powder, nutritional yeast, garlic powder, onion powder, and salt.

  5. Coat

    Sprinkle and gently massage the mixture into the kombu so it adheres well.

  6. Air fry / bake

    • Air fryer: 170–180°C for 8–10 minutes

    • Oven: 180°C for ~10–12 minutes.

    • Toss halfway and watch closely—kombu can go from tender to crisp quickly.

  7. Cool to crisp

    Let rest 2–3 minutes after cooking. Texture firms up as it cools.


Optional Finish

  • Extra nutritional yeast dusting

  • Micro-squeeze of lemon

  • Pinch of smoked paprika or chili flakes for a bolder, izakaya-style edge
